Quick and delicious cauliflower cake: Simple recipe with a unique twist

As with any good cake, this one is particularly easy to prepare and the result is more than the sum of its parts. The delicious combination of cauliflower and lentils makes all the difference here.

Don’t be put off – the only “difficult” thing about this cake is the fact that you have to soak the red lentils two hours beforehand. Otherwise they don’t need to be cooked. Combined with the cauliflower you get a cake full of flavor.

Love extra crunch (a great way to win over the kids)? Sprinkle more breadcrumbs on top for an extra crispy, golden brown result.

Ingredients:

1 medium cauliflower, cut into florets

1 cup red lentils

3 eggs

100 grams of grated mozzarella cheese

50 grams of grated Bulgarian or feta cheese

1 container of sour cream (200 ml)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon crushed garlic

½ cup breadcrumbs

¼ teaspoon cumin

Preparation instructions:

1. Rinse the lentils in a colander and place them in a bowl to soak for two hours.

2. Heat water in a pot and when it boils, add the cauliflower florets. Cook until tender, about 30 minutes, then strain.

3. In a large bowl, whisk the eggs with the cheese and sour cream and add the spices. Finely chop the cooked cauliflower and mix with the soaked lentils. Mix everything well with breadcrumbs. Make sure the mixture is not too runny, then pour it into a baking dish lined with baking paper or lightly greased. Sprinkle more breadcrumbs on top for even more crunch.

4. Bake at 180°C (350°F) for 45 minutes, or until the cake is golden brown.
